meatball and noodle soup Recipe

serve this nourishing meatball and noodle soup,considerable dish with lots of fresh crusty bread

Meatball ingredients
  • 12 oz minced beef
  • 1 small onion
  • 1 oz fresh breadcrumbs
  • 1 egg
  • salt and pepper
  • 2 tbsp plain flour

Soup Ingredients
  • 450 g onions
  • 1 lb carrots
  • 4 stalk of celery
  • 225 g Brussels sprouts
  • 4 tbsp oil
  • 1 oz butter
  • 4 pints beef stock
  • 14 oz can of tomatoes
  • 8 oz noodles
  • 2 tbsp chopped parsley

how to make meatball soup

  1. To make the meatballs, mince the beef meat again with the peeled onion till very fine. add the breadcrumbs, egg and seasoning and mix together. shape into balls about ¾ inch ( 2 cm ) across. toss in flour and reserve
  2. peel and slice the onions, scrape and slice the carrots. wash,trim and slice celery, trim and quarter sprouts.
  3. Heat the oil in a large saucepan and fry the meatballs for 5 minutes, stirring,till golden. remove from the pan with a draining spoon and reserve
  4. Add the butter to the pan and fry the onions till transparent. Add the carrots and celery and fry fro 5 minutes, stirring.Add any remaining flour and cook for 1 minute, stirring
  5. gradually add Beef stock and bring to the boil, stirring constantly.add the tomatoes and juice, then adjust seasoning. cover and simmer for 45 minutes
  6. Bring back to the boil and add the noodles, sprouts and meatballs. cook for 20 minutes
  7. taste soup and adjust the seasoning, stir in the parsley and serve immediately with crusty or rye bread
Overall Cooking time : 1 ½ hours plus
