- 300 g ( 10 oz ) boneless chicken breast meat
- 2 small carrots, ( about 120 g/4 oz ) cut into thin Strips
- 1 small cucumber ( about 140g/5 oz), cut into thin strips,
- 2 tablespoon toasted peanuts, coarsely chopper or toasted sesame seeds
- 2 spring onions, thinly sliced
- 1 tablespoon coarsely chopped fresh coriander leaves
- 1 red chili, seeds removed and thinly sliced ( optional )
- 2 tablespoons ginger juice, from freshly grated ginger
- 2 tablespoons rice wine
- ¼ teaspoon salt
- 1 teaspoon sugar
- 60 ml ( ¼ cup ) chicken stock ( from fresh stock or stock cubes )
- 3 tablespoon oyster sauce
- 1 teaspoon sugar
- ¼ teaspoon pepper
- 1 teaspoon sesame oil
how to make Shredded Chicken with Oyster Sauce
- Combine the marinade ingredients in a mixing bowl, mix thoroughly the set aside.
- Add the chicken marinade, toss to coat thoroughly then set aside to marinade for 1 hour
- when marinade, drain the chicken and plate it in a streamer to cook for 10 minutes, Remove and set aside to cool, then cut or tear the meat into strips.
- Arrange the carrot and cucumber on a platter and top the chicken.
- Put the sauce ingredients into a small saucepan and bring to the boil. Spoon the hot sauce over the chicken. Sprinkle with chopped peanuts, and spring onions, coriander leaves and sliced chili, if using, and serve .
