mackerel recipe
- 3 mackerel steaks, total about 400 g ( 14 oz ), cleaned and petted dry with kitchen paper 60 ml ( ½ in ) lengths
- 2 clover garlic, sliced
- 1 tablespoon wine
- 180 ml ( ¾ cup ) fish stock or water
- 1 teaspoon dark soy sauce
- 1 tablespoon sugar
- 1 tablespoon vinegar
- 1 teaspoon sesame oil
- 1 red chili, sliced thinly
- 1 sprig fresh coriander leaves ( cilantro ), cut into 3 cm ( 1 –in) lengths

- 2 clover star anise ground
- 1 ½ cm ( ½ -in) cinnamon stick , ground
- 1 tablespoon ginger juice
- 2 tablespoon light soy sauce
- 1 tablespoon sugar
- ¼ teaspoon pepper
how to cook mackerel Cutlets
- stir together the marinade ingredients until the sugar dis solver, set the mackerel fish slices in marinade and leave 30 minutes, turning every 30 minutes , turning every 10 minutes. Drain ; reserve the marinade for making the gravy.
