Tunisian-style noodle soup

if preferred,fresh broad beans can be used instead of dried on in this noodle soup - add the beans 30 minutes before the end cooking time

  • 4 oz dried chickpeas
  • 4 oz dried bread beans
  • 1 onion
  • 1 stalk of celery
  • 125 g belly of pork
  • 4 oz stewing beef
  • 90 ml cooking oil
  • 397 g can of tomatoes
  • 1 teasp paprika
  • 2 tbsp chopped parsley
  • salt
  • freshly-ground black pepper
  • 2 liters water
  • 1 green capsicum
  • 225 g matasse noodles

how to make noodle soup

  1. wash the chickpeas and beans, put into large bowl, cover with water and leave to soak overnight
  2. the next day, peel and finely chop the onion. trim and chop the celery. derind and finely dice pork. trim and chop the beef stew. heat the oil in a large saucepan, add onion ,celery and meats and fry for 10 minutes
  3. add the tomatoes and juice to the pan with the paprika, parsley and seasoning. add the drained and rinsed chickpeas and beans and mix well, pressing tomatoes to break them up
  4. cover with the water and bring to the boil. cover and simmer for about 2 hours till the chickpeas are tender
  5. wash,dressed and finely slice capsicum to the chickpeas and boil for about 5 minutes till the noodles all dente. season to taste ,pour into warmed dish 
  6. Tunisian style noodle soup Ready to serve
Overall cooking time : 2 hour plus overnight soaking
